These are planning estimates only. Ribs are sold by the full rack. All other proteins are by the pound (cooked weight). Actual quantities may vary depending on how the food is served and how much is on the table alongside it. Sides, drinks, and extras are not included — this is meat only.

BBQ Catering 101

How much BBQ meat do I need per person?
Plan for about 0.4 lbs of cooked meat per adult and 0.2 lbs per child under 13. That total gets split across however many proteins you're serving. For a crowd where BBQ is the centerpiece — not just one item on a big spread — bump those numbers up by 25–30%. The calculator handles all of this automatically once you set the appetite level.
How many racks of ribs do I need?
A full rack of St. Louis ribs feeds 2–3 adults when served as part of a mixed spread. Baby back racks are smaller and feed about 2. If ribs are the only protein on the table, plan one rack per 2 people. The calculator converts your guest count to racks automatically — just check the rib option you want.
Should I order one protein or mix a few?
For groups of 20 or more, two to three proteins gives people variety and keeps the table interesting. Brisket plus pulled pork is a reliable pairing — different textures, different price points, and both hold well. Adding ribs on top of that makes for a spread people talk about afterward. One protein works fine for smaller groups or tighter budgets.
Are sides included?
No. The Smoke & Soul BBQ menu is proteins only — brisket, pulled pork, smoked turkey, St. Louis ribs, and baby back ribs. Plan your own sides, drinks, and extras. The calculator covers meat only. Most hosts pair the proteins with store-bought sides or potluck contributions and it works great.
