The question comes up every time someone sees both the Traeger and the Weber sitting on the patio. "Which one do you use?" Both. "No — I mean, which one is better?" That's the wrong question. They're not competing — they do completely different jobs.

The pellet grill vs. charcoal argument misses the point because it assumes you have to choose. You don't. The Traeger is the right tool for a 14-hour brisket. The Weber is the right tool for getting a proper crust on a steak. Choosing one over the other doesn't make you a better cook — it just means you're leaving something on the table.

What the Traeger Does Better Than Anything

It feeds pellets automatically, regulates the auger speed based on the target temperature, and holds the cooking environment steady in a way that running a stick-burner or a charcoal kettle for 14 hours would demand constant, skilled attention to maintain. I could babysit a charcoal fire for 14 hours. I'd rather not.

Beyond temperature consistency, the Traeger gives you smoke penetration over time that's difficult to replicate any other way. On a long brisket cook, the smoke has 8-10 hours to slowly work its way into the meat, building the bark layer by layer. Oak smoke at 225°F for 14 hours produces a smoke ring and a bark profile that's distinct, complex, and very specifically tied to the time and temperature it took to build it. You can't rush that. You can't simulate it at 400°F for 2 hours. The Traeger is the right tool for the cook that rewards patience.

What the Pellet Grill Absolutely Cannot Do

Sear. Not really. And that's not a knock on pellet grills — it's just physics.

The Maillard reaction — the browning reaction that creates the complex crust on a properly finished piece of meat — happens at temperatures above 300°F and accelerates rapidly as you approach 400-600°F. Most pellet grills top out around 500°F on their maximum sear setting, and even then, the heat is indirect and even, which produces a different result than the direct, intense, radiant heat of a full chimney of lump charcoal burning hot and close to the grate.

When you put a rack of ribs that's been smoking for three hours onto a Weber kettle running at 600°F with the grate close to the coals, something specific happens: the fat hits the coals and flares, the sugars in the rub caramelize in seconds, the surface of the meat crisps and chars in spots, and you get a texture and flavor that no pellet grill can fully replicate. That's not a knock — it's just what live charcoal does. That's its purpose.

The Workflow: Smoke First, Then Sear

The system is simple and it works on basically every protein in this kitchen:

Brisket: 14 hours on the Traeger at 225°F with oak. The brisket comes off, rests for 2 hours in a wrapped cooler, and gets sliced. No Weber finish needed — brisket is different because the bark builds during the long smoke itself. The charcoal finish doesn't apply here.

Ribs: 3-2-1 on the Traeger with cherry and hickory. Three hours of smoke, two hours wrapped with butter and brown sugar, one hour unwrapped. In the last five minutes before service, the racks go onto a screaming-hot Weber for 90 seconds per side. That brief time on charcoal caramelizes the sauce, adds a micro-char to the bark, and gives the ribs a finish that 6 hours on the Traeger alone doesn't produce. It's the last 3 minutes of a 6-hour cook, and it changes everything.

Spatchcock chicken: 2 hours on the Traeger at 250°F with apple wood, pulled at 155°F internal. Then skin-side down on the Weber at 600°F for 3-4 minutes. The skin renders and crisps in a way that would take 20 minutes or more in a standard oven, and the result is chicken that has smoke and tenderness from the Traeger and crackling, charred, beautiful skin from the charcoal.

When Both Cookers Are Better Than One

Used separately, each cooker does its job well. Used together, in sequence, they produce results that neither can achieve alone. The Traeger handles the bulk of the cook — hours of consistent smoke and low heat that break down collagen, build bark, and get flavor deep into the meat. The Weber handles the finish — direct, intense charcoal heat that crisps the surface and caramelizes the exterior in minutes.

If I had to pick one cooker, I'd keep the Traeger. Long smokes are where most of the work happens. But both sit on the patio because they each do something the other can't. That's the whole setup — right tool, right moment, right result.
